New Years day 2009

Start with some sourdough bread right after midnight.

This is my try at a hearth style bread... it looks ok, though not fantastic, but inside it was just sandwich bread like those above.

It was cooked on a pizza stone with some steam, but prolly the dough was not wet enough.

Skip ahead to November.

I gave up on the counter top oven. It is good for roasting chicken and grilling, but not for bread. The rest of our bread has been in the old oven. I have been making 4 sandwich loaves per week.

Try three at "Hearth bread"... Wow! Looks good.

Here is Mark's bread fresh from the oven.

On the cooling rack, no wheat or starches, all Almond flour.

While the crust is smooth like cake, the crumb is very bread like and the bread is not dry at all.
